What do these ratings mean?

This is a shame for a developer that created the Smackdown series and for a publisher that released the Metal Gear series. This game is more like a tech demo than a real game. They focused too much on graphics, titillating models, seductive physics and as a trade-off they settled for horrible voice acting and lackluster gameplay. If you're a fan of WWE games then you will be appalled by the game's mechanics. The wrestlers have limited number of moves and most of them are even similar to others. The finishers are very easy to execute yet hard to counter due to the fact that there's no required "situation" to execute these moves. the only thing fascinating about the gameplay is the ability to move the camera while in a submission hold which arouses your inner perv. Not to mention the dumb A.I. The photo shoot mode (which has more depth than the in-ring bout) is another fantasy factor which increases the game's replay factor significantly. But to sum it all up, this nothing more than a clone of Dead or Alive Xtreme Volleyball.
