What do these ratings mean?

This game is really confusing!!! i got it 4 xmas and i havnt got far at all.... i really dont know what to do with it anymore... It doesnt really tell me what to do. I try kickflipping over the bushes but it wont let me.....  i payed ALOT for this game because i thought it was worth it... but idk any more if i payed for the satifaction i wanted
