You can put towers beneath the ground. They won't protect your hotel, but it will stop them from being destroyed.
You can replay levels with any blocks you choose. Use this to test yourself, and train yourself to use different types of block.
Try to attach blocks to every side of the hotel before building any further. You want to avoid making towers, as they will topple when the bottom-most block is destroyed.
