Concentrate on getting the star for completing each level first. Many of the optional collectables are hidden in awkward places, and many speed runs require fairly precise timing.
Remember that Cordy can't break barriers unless he's in freefall from sufficient height or going at full speed.
You can switch between levels from the pause menu as well as by returning to the world hub.
