To get real grip with the different controls be certain to play the tutorial first.
You are unlocking planes in the single player mode or with an in-app-purchase that will unlock them all.
With aim assist on, make sure you're shooting at the target and not the plane, otherwise you'll miss.
When you are speeding up you must be using the boost, because if you use that too much, the engines will overheat and temporarily shut down.
