You can level up in one of three areas - strength, stamina and dexterity. Strength is giving you extra power to hit enemies. Dexterity increases your chance of delivering critical hits. Stamina increases your life overall. Once this runs out, you'll need to start over.
Your life bar goes back to maximum strength each time you level up, so if you run low on health, kill a few enemies to refill it.
